Chocolate Chip Cookies
Ingredients
  • 2cups white beansCannelini, Navy or Great Northern work great
  • 2 ripe bananas
  • 2tbsp unsalted peanut buttermore, if desired, or another nut butter, such as cashew, walnut or almond
  • 1/2cup unsweetened applesauce
  • 1 egg
  • 2tsp vanilla
  • 3tbsp honeyor more, if desired
  • 3 small packets steviaor more, if desired
  • 1/2tsp sea salt
  • 2 cups freshly ground whole grain flourWondermill or other grinder, or just use whole wheat flour
  • 1/2c thick rolled oats
  • 1 1/4tsp baking powder(without aluminum)
  • stevia-sweetened semisweet chocolate chips
Instructions
  1. All ingredients organic, if possible. In a powerful blender, blend beans, bananas, peanut butter, applesauce, egg vanilla honey, stevia and salt. Pour mixture into bowl. Fold in flour, oats and baking soda. Scoop onto greased baking sheet. Place a few chocolate chips on top. Bake at 350 degrees for 11-13 minutes.
