Ingredients
  • 1tbsp olive oil
  • 1 yellow onion large
  • 1-2 vegetable or chicken bouillon cubes
  • 2cups red lentilsrinsed
  • 1 large carrotsliced
  • 1 large yellow squash
  • 4 large tomatoes
  • saltto taste
  • pepperto taste
Instructions
  1. Sauté one large yellow onion sliced and two tablespoons olive oil Add water enough to cover as you go 1-2 vegetable bouillon Add 2 cups red lentils rinsed Add 1 large carrot sliced Add 1 large yellow squash sliced and seeded Add 4 large ripe tomatoes Cook until tender about 20 minutes Blend with salt and pepper to taste
