Red Lentil Curry Soup

This red lentil curry soup with onion, celery, tomato and a special blend of madras curry spices is satisfying and nourishing. Madras curry is a blend of many healthy spices that includes coriander, chilies, cumin, turmeric, fenugreek leaves, salt, black pepper, ginger, mustard, bay leaf, pulse, cloves, nutmeg, caraway, cinnamon, cardamom seeds, mace, and asafoetida.  Enjoy!

Ingredients
  

  • 6 cups water
  • 2 cubes vegetable bouillon about 1 inch by 1 inch
  • 1 large yellow onion diced
  • 4 stalks celery sliced
  • 2 cups dried red lentils rinsed
  • 2 cups Cherry or grape tomatoes halved
  • 3 tsp Madras curry powder a special blend of spices (I've used MDH brand, found at a local Indian grocery)
  • kosher salt to taste
  • cracked pepper to taste

Directions

  • In pan over medium heat on stove, bring water, onion, celery and bouillon to a boil, reduce to medium heat and cook 10 minutes, add lentils, tomatoes, and curry and cook for about 20-30 minutes, until soft. Add kosher salt and cracked pepper to taste. 

Madras Curry

  • A prepared blend of spices that includes coriander, chilies, cumin, turmeric, fenugreek leaves, salt, black pepper, ginger, mustard, bay leaf, pulse, cloves, nutmeg, caraway, cinnamon, cardamom seeds, mace, asafoetida
