HEALTHY WAFFLES WITH OATS AND ZUCCHINI

These healthy waffles are packed with protein, fiber, vegetables, and have no flour.

I love experimenting with ways to make my favorite foods healthier. I usually experiment with the ingredients on hand, and it almost always turns out delicious.

Knowing that it is helpful to have quantities when sharing waffle recipes, I measured as I went last night so that I can share with you the following recipe.

Just know that if you are not exact on measurements or even some of the ingredients, your waffles are still likely to turn out great.

Here are my family’s responses to these waffles.

Kids:

“These are really really good – maybe the best I’ve had.”

“Will you get me a fork? I want to have more of these.”

“Perfect smell. Tell them all your children liked them. Call them yummy waffles for the tummy.”

John:

“These have no flour? And they have vegetables? Yes, these taste great.”

In blender first to last, (organic ingredients when possible):

Ingredients
  

  • 2 cups milk (almond preferred, soy or cow)
  • 1 medium zucchini (about 7-8 inches long. I do unpeeled which can yield an ever so slightly green waffle, or you can do peeled, if preferred)
  • 1/4 cup nuts or nut butter (almonds or walnuts seem best)
  • 1 tbl hemp, chia or flax seeds (or more)
  • 1/2 cup unsweetened apple sauce
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 2 tsp baking powder or baking soda
  • 4-5 cups thick rolled oats (Not instant, ideally gluten free. Stir in oats or barely blend–do not over blend the oats. )

Notes

Top with favorite fruit.
Sometimes I add a banana to the batter.
Sometimes I turn this batter into muffins.  I may add a couple of bananas, cinnamon, a little stevia, more baking soda/powder, and sprinkle chopped pecans on top. Bake at around 350-425 and bake 15-30 min or so, depending on temp and size, until golden brown.

  1. I totally missed the blender instructions at the top of the page, lol! Thankfully I found them after I stirred everything together. Mine needed more liquid. But wow, they are delicious. Thank you for the recipe!

I was thinking about living beyond limits today as I read the newsletter. It is so important to allow yourself to grow and to learn in every circumstance. You have inspired us to do that.   4. Jane, thanks so much for the great recipes. We loved the oatmeal waffles. I’ve made several variations of the oatmeal bars and they are really yummy. Again, I want to thank you and Dr. Day for this successful program. Steve has maintained his 42 pound loss since this summer. I’ve lost almost 70 and still counting. We’ve loved the journey. It has never been about, “How fast can I loose this”, but enjoying our new active life, and the pounds just come off when they’re ready. Thanks so much!
