Fresh Fruit Appetizer

My friend Louise made this delightful fruit plate of oranges, raspberries, pomegranates, and coconut for a recent gathering.
This dish offers many nutrients that our bodies need to stay well through the winter.
Oranges provide vitamin C and flavanoids which help reduce inflammatory conditions, strengthen our immune system, and protect against cellular damage. The fiber in oranges can help keep blood sugar levels down, and may help reduce cholesterol. Grating some clean organic citrus peel into any salad, dressing or tea is also found to potentially lower cholesterol.
Organic raspberries are especially high in antioxidants and anti-inflammatory phytonutrients with anti-cancer benefits. Recent research also suggests that raspberries contain specific phytonutrients that may aid in reducing the risk of obesity. Raspberries are an excellent source of dietary fiber, vitamin C, manganese, and other vitamins and minerals.
Raspberries freeze very well, so using frozen organic raspberries is a great option when fresh are not available.
Pomegranates contain significant amounts of antioxidant polyphenols that can help your body resist cellular damage and aging. Research suggests that pomegranates can help reduce joint pain and decrease inflammation, among other benefits.
Coconuts are rich in fiber, vitamins, and minerals and amino acids. Coconuts offer numerous health benefits; they are antiviral, antifungal, antibacterial, and anti-parasitic. They promote healthy skin, bones and teeth, and help reduce cholesterol and risk of heart disease, among other benefits.
When selecting shredded coconut or coconut flakes, look for unsweetened.

  • orange slices scored or peeled
  • raspberries fresh or frozen
  • pomegranate seeds
  • unsweetened coconut shaved or shredded

Instructions
 

  • Layer the fruit, starting with the orange slices on the bottom, topped with raspberries, pomegranates, and coconut. Use organic ingredients when possible.
