HEALTHY WAFFLES WITH OATS AND ZUCCHINI
Ingredients
- 2 cups milk (almond preferred, soy or cow)
- 1 medium zucchini (about 7-8 inches long. I do unpeeled which can yield an ever so slightly green waffle, or you can do peeled, if preferred)
- 1/4 cup nuts or nut butter (almonds or walnuts seem best)
- 1 tbl hemp, chia or flax seeds (or more)
- 1/2 cup unsweetened apple sauce
- 1 tsp vanilla
- 1/2 tsp salt
- 2 tsp baking powder or baking soda
- 4-5 cups thick rolled oats (Not instant, ideally gluten free. Stir in oats or barely blend–do not over blend the oats. )
