Blueberry Breakfast Quinoa
Ingredients
- 1/2 cup cooked quinoa warm or cold, as you like
- 1 cup Milk of choice
- 1 tsp or more milled flax Trader Joe's has an awesome blueberry flax blend
- 1 tsp or more Hemp seeds
- Walnuts
- blueberries Fresh, frozen, dried, or freeze-dried

would you consider putting the nutrition info on your recipes? i’m diabetic and would love to see the carb and fiber info. of course i could plug all the ingredients into to lose it but i think a lot of other people would be interested in it also.

Hi Linda, Thank you so much for your comments! Sometimes I add a packet of stevia and cinnamon, which seems to work well for me and not produce cravings. I also like quinoa sweetened with chopped dates and walnuts. If you use the Trader Joes blueberry flax blend, it has 1 gram of sugar per tablespoon. This, along with the blueberries and milk seems to offer just enough sweetness. Another idea might be to blend some fruit in the blender and mix it into the quinoa. I haven’t tried this one yet :).
