Chinese Tomato and Egg Stirfry

Ingredients
  

  • 3 pasture raised organic eggs
  • 1 green onion
  • 1 medium tomato
  • 1/2 tsp fresh crushed ginger
  • 1/4 tsp salt
  • dash of pepper

Instructions
 

  • Mix all ingredients in a bowl and stir.
  • Add to hot pan.
  • Cook until eggs solidify. Done!
    (Oil is optional. We did not use any and it tasted great.
