Healthy Alfredo and Mac 'n Cheese and Other Sauces

This sauce is great on its own as an alfredo sauce. It can also be magically transformed into a variety of other sauces by adding a few different ingredients as suggested below. It is delicious over Ezekiel sprouted grain pasta, beans, vegetables, as a cream soup base or even as a soup all on its own! Make a big batch and use it to make many different fast food dishes over a few days:

Ingredients
  

  • 1 head organic cauliflower steamed
  • 1 cup organic milk unsweetened vanilla almond, cow or soy milk
  • 3-4 oz organic tofu this is about 1/4 of a 14 oz package
  • 1/8 tsp sea salt

Instructions
 

Basic Recipe

  • Steamed Cauliflower (boil in pan of water until soft and sweet-what you taste here will translate in the sauce)
    Firm Tofu
    Soy Milk
    Kosher Salt
    Pepper
    Blend in blender until creamy.

Cheese Sauce

  • To make an inviting orange-colored sauce, steam a few carrot slices with the cauliflower and blend
    Can also melt a little cheese into the sauce in a pan on the stove, if desired

Creamy Tomato Sauce

  • Blend in favorite tomato sauce, fresh or sautéed tomatoes

Gravy

  • Add a dash of Bragg’s Amino Acids
